Kate Daw’s text and photographic works recall the process of observing the world through its details. A family recipe for vanilla ice cream describes a time-based ritual shaped by the precise moment when one thing reacts with another – when eggs and sugar, beaten, become creamy; when cream scalds over a low heat; when a liquid reaches room temperature; and when it freezes. The text pieces in this new body of work included private menus imagined by Guy Grossi and others typed upon napery gathered from Mirka at Tolarno Hotel’s own linen closet. Photographs taken in the restaurant’s slick stainless-steel kitchen were screen printed onto silk, softening the sharp lines and stark surfaces of a sterile workspace from which tantalising dishes emerge.
